The Best Oysters Are the Ones That Are Naked

It may sound like an unusual statement, but when it comes to oysters, the best ones are often the ones that are completely naked.


No cheese. No garlic butter. No truffle foam. No spicy sauces.


Just the oyster.


Why? Because a great oyster already has everything it needs. Its flavour is shaped by the waters it grew in—the salinity, minerals, plankton, tides, and seasons. Every oyster tells the story of its origin, much like wine reflects its vineyard.


When you pile on toppings, you aren't enhancing the oyster. You're covering up the very characteristics that make each one unique.


Think of it this way: you wouldn't judge a fine wine after mixing it with cola. The same principle applies to premium oysters.


A naked oyster allows you to appreciate its natural sweetness, brininess, creaminess, minerality, and lingering finish. You'll notice how an oyster from France differs from one from Ireland, or how the same oyster changes from season to season.


This doesn't mean toppings are wrong. A squeeze of lemon or a touch of mignonette has its place, especially if it encourages more people to enjoy oysters. But if you've never tasted an oyster on its own, you've never truly experienced what that oyster has to offer.
